Our wines are officially certified as organic wines

Weinmanufaktur Ingelfinger Fass began converting to organic viticulture in the 2020 wine year. The first vintage in organic quality was harvested in the fall of 2023. The wines are available now.

The changing climatic conditions lead to necessary adjustments in the cultivation of the vines. The long periods of drought in recent years have caused stress. Although the vines at Weinmanufaktur Ingelfinger Fass are rooted quite deeply and have access to hidden water reserves, the general conditions continue to put a strain on the vineyard ecosystem. This was one of the reasons why the vineyards are now cultivated organically.
Avoiding herbicides and artificial fertilizers, introducing organic humus, planting greenery in spring and autumn and open soils in every second vineyard alley give the vineyards more vitality and stability against the effects of climate change.

In spring 2024, a new vineyard was planted below the Ingelfinger Fass. Plant protection treatment is also necessary in organic viticulture. However, to further reduce this measure, Weinmanufaktur Ingelfinger Fass is breaking new ground and planting two PIWI grape varieties for the first time. PIWI stands for “fungus-resistant”, which is the name given to new grape varieties that have multiple resistances to fungal attack. The use of pesticides can thus be drastically reduced, which promotes organic viticulture. The white variety Cabernet Blanc and the red variety Cabernet Cortis were planted.

Cabernet Blanc is a fairly newly bred white wine grape variety. It originated in Switzerland and was further developed in Germany. The vine is characterized by very good resistance to diseases and its taste lies between Riesling and Sauvignon Blanc. A grape variety that is not yet widespread, but is becoming increasingly popular.

Cabernet Cortis is a fungus-resistant red wine variety bred in 1982, which was crossed from the Cabernet Sauvignon and Solaris varieties at the State Viticulture Institute in Freiburg. The wine is very intense in color and rich in phenols, the taste is reminiscent of Cabernet Sauvignon. The first harvest of these varieties is expected in 2026, meaning that the wine will be available in bottles in spring 2027.
